French Canadian from Montreal, trained in classical French cookery and a skilled pastry chef - his desserts are pure delight! Brian travelled to Europe to work and expand his knowledge, fell in love with Australia and all its variety of fresh produce and abdundence. Brian will put some warmth in his dishes for this great skiing season 2008 "bonne appetit!"
